The food freeze-drying machine consists of a refrigeration system, a vacuum system, a heating system, and an electrical instrument control system. The main components of the food freeze-dryer are drying oven, condenser, freezing unit, vacuum pump, heating/cooling device and so on. The principle of the food freeze dryer is to freeze the items to be dried to below the triple point temperature, and then vacuum the solid water (ice) in the items to directly sublimate into water vapor, remove from the items, make the items dry. After the material is pre-treated, it is sent to a quick-freezing chamber for freezing, then sent to a drying warehouse for sublimation and dehydration, and then packaged in a post-processing workshop. The vacuum system establishes a low pressure condition for the sublimation drying chamber, the heating system provides the sublimation latent heat to the material, and the refrigeration system provides the required coldness to the cold trap and the drying chamber. The equipment adopts high-efficiency radiant heating, the material is heated evenly, adopts high-efficiency catching cold trap, and can achieve rapid defrosting; adopts high-efficiency vacuum unit and can realize oil-water separation; adopts parallel centralized refrigeration system, multi-channel on-demand cooling, working conditions Stable and energy-saving; artificial intelligence control, high control accuracy, easy operation.
The quality requirements for freeze-dried products are: constant biological activity, uniform appearance, color, full shape, firm structure, fast dissolution rate, and low residual moisture. To obtain high-quality products, we should have a more comprehensive understanding of the theory and process of freeze-drying. The freeze-drying process includes pre-freeze, sublimation and re-freezing three stages. Reasonably and effectively shortening the cycle of lyophilization has obvious economic value in industrial production.
When using a food freeze-dryer for the first time, the components of the instrument must be thoroughly cleaned. The stainless steel parts should be cleaned with ethanol. The organic glass should be cleaned with normal saline.

In the method of preventing air leakage, apply a proper amount of vacuum grease to the rubber ring, and then tighten the clamps to make the joints fit together more closely. If the airtightness is not good, some vacuum grease should be applied to the sealing rubber ring above the cold trap, the plexiglass cover should be lightly screwed on the rubber ring, and the airtightness should be tested by opening the vacuum pump to ensure the integrity of the gas seal.
